Broccoli white cheddar mac

This is definitely not the type of food I make often, but Shavous is coming up! I think a little indulgence during a holiday is totally acceptable…and it’s me so of course I threw something green in this delicious mac.
Broccoli cheddar is a classic combination and this recipe does not disappoint. The sauce is cheesy and flavorful without feeling too heavy, and the whole thing can be made in one pot! I included instructions for baking the mac because I love a crispy crunchy top, but you could totally skip that and serve it as a stovetop mac for a delicious variation. 
This recipe could easily be made completely ahead, or you could make the mac one day and add the topping and bake the next day. It’s great both ways depending on how much time you have.

Ingredients
  

  • 1 lb Short Pasta, any shape you like
  • 2 c  Broccoli Florets, chopped into small pieces 
  • 4 Tbsp Unsalted Butter
  • 1 Large Shallot, chopped
  • 3 Garlic Cloves, finely minced
  • 1/4 c Flour 
  • 3 c Milk
  • 1/2 c Heavy Cream
  • 2 c Sharp White Cheddar, shredded
  • 1 c Mozzarella, shredded
  • 1/2 c Grated Parmesan, plus 2 Tbsp 
  • Kosher Salt/Black Pepper to taste 
  • 1/4 c Breadcrumbs
