Springy chopped salad
We know by now that I am borderline obsessed with salads. I could happily eat a giant salad every day for lunch or dinner! The key to interesting, satisfying salads is to incorporate lots of different textures and this Springy Chopped Salad does this perfectly. The red wine vinaigrette is a delicious, savory compliment to all of these yummy spring veggies. This salad is a great way to celebrate the season, so get to chopping! I hope you love it.
Ingredients
- 1 Bunch Bag Salad Greens
- 1 15oz can Chickpeas, rinsed and drained
- 1 c Asparagus Spears chopped
- 1 c Cucumber thinly sliced
- 4 Radishes thinly sliced
- 1/4 c Red Onion raw or pickled
- Crumbled Feta optional
Red Wine Vinaigrette
- 1 tsp Mustard
- 1 Garlic Clove grated
- 1/2 tsp Dried Oregano
- 2 Tbsp red wine vinegar
- 1/4 c Olive Oil
- Kosher Salt/Black Pepper
Instructions
- Toss all ingredients together in a large salad bowl or platter. Toss with red wine vinaigrette and serve.
